Wheat Berry Breakfast Parfait
Wheat Berry Parfait Recipe
Ingredients
- 3 cups vanilla yogurt
- 1½ cup cooked wheat berries (see notes for cooking instructions)
- 1 cup fresh strawberries, sliced
- 1 pint fresh blueberries
- 8 Tablespoons honey
Instructions
In a pint-sized serving container, layer the following:
- ¼ cup of yogurt
- Tablespoon of honey
- 2 Tablespoons of cooked wheat berries
- ⅛ cup sliced strawberries
- ¼ of yogurt
- Tablespoon of honey
- 2 Tablespoons of cooked wheat berries
- ¼ cup of blueberries
- ¼ cup of yogurt
- 2 Tablespoons of cooked wheat berries
- Cover top with strawberries and blueberries
Repeat for remaining three pint containers.
Notes
To cook wheat berries, place in a sauce pan with enough water to submerge. Bring to a boil then reduce to a simmer and cover. Cook for 45 minutes or until berries are plump and some are beginning to split. They should be chewy, not mushy or tough. Drain excess water and allow to cool before using. One cup of dried wheat berries yields 2-3 cups of cooked.
