Scandinavian Frittata
Ingredients
- 1 cup chopped onion
- 3 Tablespoons butter
- Salt and pepper
- 3 cups leftover baked or roasted potatoes, cut into ½-inch pieces
- 8 oz. fresh spinach
- 2 Lakewinds housemade Swedish Potato sausages, browned and sliced
- 8 eggs, beaten
- 4 oz. Havarti cheese, shredded
Instructions
In a 10” cast iron skillet, sauté onion in butter for 5 minutes. Add potatoes, season with salt and pepper and cook 5 more minutes. Add spinach and a tablespoon of water, cover and cook until spinach is wilted about 5 minutes. Stir to combine. Add sausage, then pour egg mixture over all. Add shredded cheese, pressing down with a spoon. Bake in a 350° oven for 20-25 minutes until eggs are set and the top is lightly browned.
