Quick and Easy Filo Bites

These three delicious bites are easy to whip up using the same muffin pan. The beauty of ricotta is how easily it can be adapted to work with a variety of flavor profiles, from herby to sweet to savory. You get all three with this recipe!

Ingredients

  • 4 sheets filo dough, thawed and cut into squares*
  • 1 ½ cups ricotta cheese
  • 2 Tablespoons fresh chives, minced
  • 2 Tablespoons fresh basil, minced
  • 2 Tablespoons fresh dill, minced
  • Rind and juice of one lemon
  • 1 Tablespoon sugar
  • 1 cup Divina caramelized onion jam
  • Bare Honey cut honey comb, cut into 16 teaspoons
  • Sea salt flakes and fresh black pepper, to taste

Instructions

Preheat overn to 400°. In a medium bowl, mix minced herbs into ½ cup of the ricotta and season with sea salt and black pepper to taste. In a separate bowl, mix lemon zest, lemon juice, and sugar into ½ cup of the ricotta.

Scoop 2 Tablespoons of the herb filling onto 16 of the filo squares. Repeat with the lemon filling. Scoop one Tablespoon of remaining ricotta and top with one Tablespoon of the caramelized onion jam on the remaining 16 squares.

Gently fold up the edges of the filo and place into muffin tins or set onto a baking sheet lined with parchment paper. Bake for 7-10 minutes, making sure the edges of the filo do not burn.

Before serving, garnish the herbed bites with a sprig of dill, the lemon bites with the honeycomb, and the caramelized onion jam bites with sea salt.

Notes

*Remove desired amount of sheets from package, handling carefully to avoid tearing. Thaw overnight in the refrigerator. Lay out on a clean surface and cut each sheet into 12 equal squares.
