Lemon Pesto Chicken Noodle Soup in a Jar

Ingredients
- 3 Tablespoons pesto
- 1 Tablespoon lemon zest
- 1 teaspoon lemon juice
- 1 teaspoon chicken stock base
- 3 ounces leftover cooked pasta
- ⅓ cup matchstick carrots
- ⅓ cup shredded rotisserie chicken
- Shaved Parmesan cheese
- Fresh basil, if desired
- Lemon wedge
Instructions
In a resealable glass pint jar, stir together the pesto, lemon zest, lemon juice and chicken stock base. Top with cooked pasta, carrots, shredded chicken, Parmesan cheese, basil and a lemon wedge. Seal jar and refrigerate for up to 4 days.
When ready to serve, remove lemon and basil to a small plate or napkin. Add boiling water to the jar and stir gently. Seal the jar and let sit 2 minutes. Open the jar, squeeze in the juice from the lemon wedge and top with basil.
