Gorgonzola & Bacon Stuffed Mushrooms
These stuffed mushrooms are sure to be a hit at your next gathering. Their small size offers a pop-in-your-mouth convenience and they also tend to hold together a little better than the big, ooey-gooey ones. Make a lot, they’ll go fast!
Ingredients
- 1 8 oz. package of cremini mushrooms
- 1 Tablespoon butter
- 3 strips bacon, cooked and crumbled
- 2 Tablespoon chopped scallions or chives
- 3 oz. cream cheese, softened
- 3 oz. crumbled gorgonzola
- ⅓ cup bread crumbs
Instructions
Heat the butter in a sauté pan over medium-high heat.
Remove and chop the mushroom stems. Once the butter is beginning to bubble add the chopped stems and sauté for 5 minutes.
Remove the stems and combine with the bacon, scallions, cream cheese, gorgonzola, and bread crumbs. Stuff the mixture into the bottom of the mushroom caps and place them in a greased baking dish.
Bake at 350° for 15 minutes.
