Dark Chocolate Almond Butter Coconut Date Rolls
Ingredients
- 16 Medjool dates
- 8 teaspoon almond butter
- 1 cup dark chocolate chips
- 1 Tablespoon coconut oil
- 1¼ cup finely shredded unsweetened coconut flakes
Instructions
Melt dark chocolate and coconut oil in a small bowl either on the stovetop or microwave. Set aside.
Pit the dates and smear ½ teaspoon of almond butter in the center and roll the date into a ball so the almond butter is contained in the center.
Dip the dates in the melted chocolate until fully covered. Roll dates in coconut flakes and set on a plate.
Date rolls can be immediately enjoyed, or refrigerated for up to 4 days.
