For the Maple Mustard Curry Sauce:
Simmer lentils in a medium sauce pan, covered, in 3 cups water until tender (around 20 minutes). Drain any remaining liquid. In blender, pulse lentils, dates, walnuts, mustard, curry, and salt until combined, but plenty of texture remains. Toss in a bowl with bread crumbs until combined. Form into small 2 inch patties and fry in oil in a skillet over medium heat until browned on both sides.
Whisk all Maple Mustard Curry Sauce ingredients until combined.
Serve in lettuce cups with Maple Mustard Curry Sauce.
