6-Minute Garlic Parmesan Zoodles

Ingredients

  • 3 Tablespoon butter
  • 1 clove garlic, chopped
  • 4 cups zoodles
  • ½ teaspoon ground pepper
  • 1 teaspoon salt
  • 1 handful of chopped parsley
  • 2-3 Tablespoons grated parmesan cheese
  • ¼ cup toasted pine nuts

Instructions

In a large skillet over medium heat sauté the garlic in butter for 3-4 minutes.

Add in the zoodles, salt, & pepper  and toss gently with tongs.

After 3-4 minutes of sautéing on medium heat, add in the parsley, parmesan, and pine nuts.  Toss gently to combine.

Notes

 If you have a little extra time, prior to beginning recipe salt the zoodles and let them sit in a colander for 20 minutes to pull some of the liquid from the zoodles.
