Citrus Posset
This pudding-like dessert is made from just three easy ingredients, and yields a delightfully creamy texture and tangy-sweet taste. Make them ahead and serve them at your next holiday gathering, or simply have a few on hand in the fridge for indulging.
Ingredients
- 16 oz. heavy whipping cream
- ⅔ cup granulated sugar
- 2 large lemons, juiced and zested, to make ½ cup juice and 2 Tablespoons zest
Instructions
In a medium saucepan, bring cream and sugar to a gentle boil over medium heat. Stir frequently to ensure the sugar dissolves. Simmer over low heat for 3 minutes. Turn off heat.
Stir in lemon zest and juice until incorporated.
Let the mixture cool for 10 minutes. Using a fine mesh strainer or cheesecloth, strain mixture into a small pitcher or measuring cup that contains a pour spout. Pour into 6 small cups or ramekins of your choice.
Store in refrigerator until cool. Once cooled, cover with reusable wrap or cloth. Refrigerate for at least 3 hours or up to 24 hours until well set.
Garnish with lemon slices, raspberries, candied lemon, candied nuts, chocolate shavings, or fresh mint.
Keeps in the refrigerator for up to 3 days. Variations of this recipe can be made with other types of citrus, including limes, oranges, or grapefruit.
