Try this tangy meyer lemon salsa on chicken, lamb, or fish. Use it as a garnish for creamy soups and vegetable pizzas. It’s great stirred into rice for a bright side dish, and terrific with smoked fish.

Yield 1 1/2 cups
Try this tangy meyer lemon salsa on chicken, lamb, or fish. Use it as a garnish for creamy soups and vegetable pizzas. It’s great stirred into rice for a bright side dish, and terrific with smoked fish.
Ingredients
- 2 Meyer lemons
- 1 clove garlic, minced
- ½ cup chopped parsley
- 2 Tablespoons extra virgin olive oil
Instructions
Using a sharp knife, cut the lemons into thin slices, then stack and chop with the garlic and parsley. Turn into a bowl and stir in the olive oil with salt and pepper to taste.
